You’re right, Josh. Actually, in a recent survey (I wish I could find it) food ranked 5th. Even clean restrooms ranked higher. One would think if a restaurant was using that type of beef quality, they would ensure that all other aspects of the dining experience would equal their beef.
I’m just guessing here. Ned’s was like a lot of other chain restaurants. A swarm of servers\floor people and 4-5 cooks. So, you keep turning a 250 seat restaurant over and over, sure the wait staff keeps up, but the kitchen gets bogged. It makes the service look slow, but it is really the kitchen getting slammed. And as long as tables empty and they can seat people, they seat people regardless of wait times in the kitchen.
Oh, how do I know this. I was approached by the NK organization at one time. They wanted me to help improve ticket times. My free advice was to hire as many cooks as you have waitstaff….

And what is sad about the two previous statements is the fact that NK used a lot of USDA Prime Beef which is some of the best beef you can buy.

Food isn’t everything at a restaurant. You know that, Chef!

Never was a fan of the tag-team servers. It confuses alot of older folks.

I loved the curry salad dressing. That’s pretty much the only reason I went there.
